01.        Contestants may check in beginning 6:00 PM Thursday, May 6th. Trailers, Pits,   
              etc., left unattended will be at the risk of the contestant.  

02.        The person completing the entry form
MUST be 18 years of age or older and      
             
WILL be held RESPONSIBLE for the entire cooking team and guest.  

03.        Excessive use of alcoholic beverages will be grounds for disqualifications.

04.        Each team will be responsible for clean up of their space.

05.        Cooks Meeting will be Saturday, May 8th at 8:00 AM.  Bean Cups and Meat        
            Trays will be passed out. Tickets must be signed on acceptance of trays.

06.        Quite Time: 1:00 AM - 8:00 AM. Moderate amplification at other times.

07.        Contestants must be checked in by 8:00 AM, Saturday May 8th in order to          
            receive contest trays.

08.        
NO seasonings or cooking of contest meats before 6 PM Friday, May 9th.
             NO pre-cooked, NO pre-boiled or NO pre-marinated meats. Approximately 20     
           bites per category and a minimum of 1 show piece each category.  
          Ribs must have bone in sample. Meat is subjected to inspection.

09.        Fires must be of wood or wood substance.
NO electric or gas grills.
          Contestants must supply all needed equipment and supplies.

10.        Unsanitary cooking conditions may be grounds for disqualification.

11.        Mayfest Board reserves the right to make additional regulations as situations
          warrants.

12.        
NO garnish or sauce in tray. SILVER FOIL ONLY must be used in tray.

13.        Barbecue will be judged on texture, moisture, tenderness, aroma, and taste.

14.        
The decision of the Judges are final.

15.        Rules of the Central Texas Barbecue Association will prevail.

16.        
NO Pets allowed on Mayfest grounds. NO ATV's will be allowed on the grounds  
            other than those used for Mayfest Official Use.
NO extra vehicles of any kind     
            will be allowed in the pit area once the pit is setup.
BBQ COOK-OFF RULES & REGULATIONS
01.        Beans must be DRY PINTO ONLY.

02.        Entries must be free of markers.

03.        Only BEANS & JUICE shall be turned in.

04.        Beans shall not contain any ingredient larger than a single bean.

05.        Beans will be judged on aroma, appearance, juice, tenderness and taste.

06.        You
MUST be entered in the BBQ Cook-Off to enter Jackpot beans.

07.        Each team may have only
ONE Jackpot Bean entry.
